To make fried cauliflower rice, start by slicing each egg rolls down the middle and emptying it’s filling into a bowl. Next, heat sesame oil in a wok or large skillet. Add in the cauliflower rice and stir fry for a few minutes. The rice is done when it’s soft but not mushy.

Now, make a hole in the middle of the cauliflower rice with a spoon. Pour in two beaten eggs (or tofu) and stir until the eggs are cooked.

Then, pour in the egg roll rolling and stir generously until well combined with the rice. Cook until heated through. It’s starting to look pretty tasty, don’t you think?

Ingredients
  • 5 pack Van’s Kitchen egg rolls
  • 4 cups cauliflower rice
  • 1 tablespoon sesame oil
  • 2 beaten eggs (or scrambled tofu)
  • 2 tablespoons soy sauce
Instructions
  1. Separate the egg rolls from their wrappers and empty contents into a bowl. Discard the wrappers.
  2. Heat 1 tablespoon sesame oil in a wok or large skillet over medium low heat. Add the cauliflower and stir fry quickly for 6-10 minutes to until soft.
  3. Make a hole in the middle or the cauliflower rice with a spoon and add the eggs. Stir until the eggs are cooked.
  4. Stir in the egg roll filling and cook until heated through.
  5. Stir in the soy sauce and serve.
