Need a low-carb dinner idea? Try this fried cauliflower rice recipe made with Van's Kitchen egg rolls. It's a healthy spin on classic takeout fried rice. This recipe is so light, fluffy, and tasty, you may never go back to "real" fried rice again!
  • 5 pack Van's Kitchen egg rolls
  • 4 cups cauliflower rice
  • 1 tablespoon sesame oil
  • 2 beaten eggs (or scrambled tofu)
  • 2 tablespoons soy sauce
  1. Separate the egg rolls from their wrappers and empty contents into a bowl. Discard the wrappers.
  2. Heat 1 tablespoon sesame oil in a wok or large skillet over medium low heat. Add the cauliflower and stir fry quickly for 6-10 minutes to until soft.
  3. Make a hole in the middle or the cauliflower rice with a spoon and add the eggs. Stir until the eggs are cooked.
  4. Stir in the egg roll filling and cook until heated through.
  5. Stir in the soy sauce and serve.
