Cheesy Egg Roll & Tater Tot Breakfast Bake

- 1 lb. ground sausage
- Frozen Tater Tots (32 oz.)
- 2 cups shredded cheddar cheese, divided
- 8 eggs
- 1 cup milk
- Pinch of salt
- ½ tsp. black pepper
- ½ tsp. onion powder
- 1 package Van's Kitchen Pork Egg Rolls, sliced
- Preheat oven to 350º.
- Brown sausage in a large skillet. Cook, stirring occasionally, until browned. Drain.
- In a large bowl, gently combine the tater tots, sausage and 1 cup shredded cheese.
- Pour into a greased casserole dish or a 13x9 baking pan.
- Whisk the eggs, milk and seasonings and pour over the sausage mixture.
- Bake for 30 minutes.
- Remove from oven and top with sliced egg rolls and the remaining cup of shredded cheese.
- Return to oven and bake for 20 minutes.
